Now this is the perfect present to yourself just before Christmas!  Have you ever wanted to learn how to make your own cheddar?!  Imagine maturing your own cheddar to exactly to how you like it?  Well this class is unique to Oxfordshire and the only person to teach this is Louise Talbot.

Once the basic principles of cheese making are learnt, you will begin the process of turning creamy milk into a beautiful little truckle of cheddar which they’ll then mature over the next 1-3 months. The longer they’re matured, the stronger the flavour!

Traditionally curds are ‘cheddared’ over a period time, which would normally prevent a cheddar from being made on a day class. However, by using different techniques, a beautiful rustic cheddar can be made.

Everyone will make their own 1/2kg truckle which you will continue to press for a further 12 hours at home, before waxing. Don’t worry Louise will give you all the information and notes to be able to do this.  We’ll also make a batch of delicious tomato chutney and lots of crusty warm ciabatta bread to take home to enjoy.  What better way to spend a Friday before Christmas?
