Spring Souk with Ghalid Assyb – Saturday 14th April 2018, 11am – 2pm


Welcome back to Ghalid for his third visit. We have planned a seasonal delight for you that includes new season spring lamb and hopefully the first asparagus! Mix it up with all those amazing souk flavours and this class will transport you across to Morocco! You will learn all about the subtle blends of spices and authentic techniques that are used to create so many sweet and savoury dishes from Morocco.

We, or should we say you! will be creating –

  • Asparagus with anchovies, capers and green olives dressing
  • Aubergine salad with toasted cumin and harissa yoghurt sauce
  • Broad beans, artichoke & courgette salad with mint, preserved lemon & Moroccan black olives
  • Butternut squash with ginger, tomatoes and lime yoghurt
  • Glazed lamb chunks with shallots and spice
  • Lemon, almond and polenta cake
